Garlic and Spinach Chicken
Serve this flavoursome chicken with spicy sweet-potato wedges and a tomato salsa to add colour and variety to this healthy meal. (Both recipes can be found in this book)

Ingredients
- 2tsp butter
- 1.5tsp garlic paste
- small amount of parsley (half a handful)
- 2 skinless chicken breasts
- seasoning
- 75g spinach
- 50ml chicken stock
- 1 small onion (alternatively use 1 small red onion)
- 16 baby tomatoes, on the vine (alternatively use 2 ordinary tomatoes)

Preparation
Step 1
Preheat oven to 190°C.
Finely chop the parsley.
Slice the onion and tomatoes.
Make up the chicken stock.
Slice the chicken lengthways, without cutting right through.
Step 2
Mix the butter, garlic paste and parsley together in a bowl.
Fill each chicken cavity with the mixture, using a large teaspoon, then close up again.
Season well.
Step 3
Lay a bed of spinach into a baking dish.
Pour the chicken stock over the top, then place in the chicken.
Cover with the onion and tomato.
Season well again.
Step 4
(Prepare the wedges)
Cover the chicken baking dish with foil and cook for 30 mins.
