Ingredients

  • 1tbsp olive oil
  • 1 large onion
  • 2 garlic cloves
  • 500g lean minced lamb
  • 1tsp ground cinnamon (this could be excluded to please the youngest member of the family)
  • 1 beef/lamb stock cube
  • 2x400g chopped tomatoes
  • 1tbsp dried oregano
  • 400g macaroni
  • 250g tub ricotta
  • 50g parmesan (or alternative e.g. cheddar), grated
  • 50ml milk
  • Seasoning

Preparation

Step 1

Chop the onion and crush the garlic.
Heat oil in a pan, add the onion and cook for 10 mins until soft.
Add the garlic and cook for 1 min more.

Step 2

Tip in the lamb mince, turn up the heat and brown.
Use a wooden spoon to break the meat up.

Step 3

Crumble in the stock cube and add the tomatoes, (cinnamon) and oregano.
Stir well.
Simmer for 15 mins covered then 15 mins uncovered until the sauce has thickened and the tomatoes have cooked down.

Step 4

Preheat oven to 200°C.
Cook the macaroni according to pack instructions.

Step 5

Mix together the ricotta, most of the parmesan and the milk. Season well then stir into the macaroni.

Step 6

Tip the mince into a large baking dish.
Top the mince with the macaroni mixture.
Sprinkle any remaining cheese on the top, then bake for 30 mins until golden and bubbling.

Serve with garlic bread, if you like.
