Ingredients

  • 1tbsp oil
  • 1 large onion
  • 1 red pepper
  • 2 garlic cloves
  • 1 heaped tsp hot chilli powder (or 1 level tbsp mild)
  • 1tsp paprika
  • 1tsp ground cumin
  • 500g lean minced beef
  • 1 beef stock cube
  • 400g chopped tomatoes
  • half tsp dried marjoram
  • 1tsp sugar
  • seasoning
  • 2tbsp tomato puree
  • 410g red kidney beans
  • plain boiled long grain rice
  • block of cheese to grate
  • (secret ingrediant = 1-2 squares plain chocolate in place of the sugar)

Preparation

Step 1

Dice onion. Chop pepper into small chunks.
Peel, then finely chop or crush the garlic.

Step 2

Place pan over medium heat, add the oil for 1-2 mins until hot.
Add onion and, stirring frequently, cook for about 5 mins until soft and slightly translucent.

Step 3

Tip in the garlic, red pepper, chilli powder, paprika and cumin.
Stir well, then leave for another 5 minutes.

Step 4

Turn up the heat a little. Add the meat (remember to remove the plastic from the inside of the packaging!) and break it up with a wooden spoon.
Stir and prod for at least 5 mins until meat is evenly sized and no pink colour remains.

Step 5

Crumble the stock cube into 300ml hot water, stir, then pour into the mince mix.
Add the tomatoes, marjoram, sugar (or secret ingrediant!), plenty of seasoning and tomato puree. Stir well.

Step 6

Bring to the boil, stir well then cover with a lid and turn heat down until gently bubbling.
Leave for 20 mins, checking and gently stirring occasionally. (If drying out, add a couple of tbsp of water and check heat is low enough). Mixture should look thick, moist and juicy.

Step 7

Drain and rince the kidney beans in a sieve then stir them into the mixture.
Bring to the boil and gently bubble without the lid for 10 mins (add a little water if it looks too dry).
Season to taste. (probably needs more than expected, especially for Mum's taste!)

Step 8

Replace lid, turn off heat and leave to stand for 10 mins before serving. (This ensures that the flavours mingle with the meat!) Serve on a bed of white rice and top with grated cheese.
