If you want to surprise/confuse your daughter on her birthday, then a piñata cake is definitely one way to do it!

Ingredients
- For the cake:
- 175g unsalted butter
- 175g caster sugar
- 3 eggs
- 175g self raising flour
- For the centre:
- 1 medium cup of Pic-n-Mix
- For the icing:
- 150g unsalted butter
- 350g icing sugar
- tsp vanilla essence
- (few drops food colouring)
- 2-4 tbsp milk
- Your choice of decoration e.g. skittles

Preparation
Step 1
Preheat oven to 180°C.
Grease two medium pyrex glass bowls.
Briefly whisk the eggs with a fork.
Step 2
THE CAKE:
Beat the butter and sugar together until light and fluffy.
Add the eggs, one at a time, beating well after each addition.
Fold in half the flour using a spoon, then fold in the second half.
Step 3
Put the cake mixture into the greased bowls, flatten the tops with a knife, and bake for 20 mins until a skewer inserted into the middle comes out clean.
Leave to cool in the bowls then transfer to a wire rack.
Step 4
Using a knife, carefully cut out the centre of the flat side of each cake, ensuring you leave at least an inch of cake as the supporting structure. (see picture)
Step 5
FOR THE BUTTER ICING:
Beat the butter until soft.
Add the icing sugar, a little at a time, beating after each addition.
Add the vanilla, (colouring), and milk and beat well.
Step 6
Cover the remaining flat side of one cake with the butter icing.
Fill both hollow sections of cake with Pic-n-Mix sweets.
Step 7
Using a sturdy, flat object (such as a plate) to hold the sweets inside the half-cake which has no butter icing on, assemble the piñata by sliding this half-cake onto the other, using the butter icing as glue.
Step 8
Use the remaining butter icing to cover the entire cake.
Decorate as you wish.
Present to the birthday-girl with a knife, sit back and chuckle.
Some sweets may make a bid for freedom during assembly - eat these and carry on as usual :)
