
Ingredients
- 1tbsp Olive Oil
- 2 Chicken Breasts
- 75g Chorizo
- 1 Onion
- 1 Red Pepper (and a spare?)
- 2 Garlic Cloves
- 1tbsp Cajun
- 250g Rice (long grain)
- 400g Plum Tomatoes
- 350ml Chicken Stock

Preparation
Step 1
Dice the onion.
Thinly slice the red pepper. (perhaps a little spare in case a certain someone happens to walk in.. *cough* Esther *cough*)
Crush the garlic.
Slice the chorizo.
Measure out the Cajun seasoning.
Make up the chicken stock.
Step 2
In a large frying pan with lid, heat the oil and brown the chicken for 5-8 mins. (Until golden).
Then remove the chicken and put to one side.
Step 3
Tip the onion into the pan and cook for 3-4 mins until soft.
Step 4
Add the pepper, garlic, chorizo and Cajun seasoning.
Cook for a further 5 mins.
Step 5
Stir in the chicken and rice. Add the tomatoes and stock.
Step 6
Cover and simmer for 20-25 mins until rice is at the perfect eating texture.
