  • 70 g green marzipan
  • 40g sugar
  • 250 ml of water
  • 1 drop of bitter almond flavouring
  • For the raspberry granita
  • 90 grams of raspberries
  • 30 grams sugar
  • 200 ml of water

Preparation

Step 1

Almond granita

Place the water, sugar, almond paste and the bitter almond flavouring in a saucepan and melt over low heat. Stop cooking when the almond paste has completely dissolved. Place in a metal tin in the freezer for 2 hours, remove and mash with a fork. Put it back in the freezer and do this every half hour for 3 hours, and then take out the freezer at least 10 minutes before serving.

Step 2

Raspberry granita
Put the raspberries, water and sugar in a saucepan, simmer for 10 minutes. Pass this mixture through a fine sieve to remove the raspberry seeds. Pour the mixture into a metal tin and place in the freezer for 3 hours, repeating the same steps as for the almond granita...breaking up the mixture with a fork every half an hour and taking it out the freezer 10 mins before serving.

Step 3

Presentation:
Alternate layers of granita in a serving glass and serve immediately.
