- 1kg tomatoes
- pinch sugar
- 1 tbsp balsamic vinegar
- 3 tbsp olive oil
- 1 large onion, chopped
- Thyme or other herb of choice
- 2 garlic cloves, chopped
- 1 tbsp tomato purée
- 600ml vegetable stock
- 2 tbsp mascarpone cheese (or use double cream as alternative)

- 7 cups chicken stock
- 1 sprig fresh parsley, chopped

A healthy soup with broccoli and wild cabbage
- 2 tablespoons unsalted butter
- 1 medium yellow onion
- 1 bay leaf
- 1 carrot
- 4 cloves garlic
- 120ml dry white wine
- 2 – 3 medium heads of broccoli
- 750gr roughly chopped wild cabbage and/or spinach
- 4 tablespoons chopped fresh chives
- 1 1/2 littre organic vegetable stock
- 250ml milk (you can replace with double cream, I just wanted to be lighter)

- 200gm fresh bilati bandhakopi (Brusselsprout)
- 100gm Musur Dal (Red Lentil seeds)
- 100gm Moog Dal (Yellow moong seeds)
- 2 Green Chillies
- 2-3 tablespoons of Oil : Mustard oil(preferred)/Sunflower oil
- Spices:
- Panch phoron/Panchpuran: 1/3 tea-spoon
- Turmeric powder (Halud/Haldi): 1/2 tea-spoon
- Sugar: 1/4 tea-spoon
- 700ml Water
- Salt to Taste
