  • 400g strawberries
  • 50g caster sugar
  • 150ml whipping cream
  • 3 egg whites
  • Fresh mint to garnish

Preparation

Step 1

Place the strawberries in a food processor and whiz until smooth. Whisk the egg whites till firm then add the sugar and continue whisking till glossy.

Step 2

In a separate bowl whisk the cream until slightly thickened then fold into the egg. Put the strawberry purée on top and fold in. Then leave in the fridge for 2 hours.
