Summer cous cous salad

A light, yet flavorsome dish. Guaranteed to relight those summer memories.
Ingredients
- 350g Cous cous
- 1 red onion - sliced
- 200g sweetcorn
- 1/2 head of broccoli
- 2 tomatoes - chopped
- 250g cucumber - chopped
- 1 tsp chopped or pureed garlic
- 1 Vegetable or chicken stock cube
- 1 tbsp Maggi seasoning
- 400ml boiling water or enough to drown the cous cous
- Salt and pepper to taste
- 100ml vinaigrette

Preparation
Step 1
Place the cous cous into a bowl along with the stock cube and garlic then pour over the boiling water, making sure there's about 100ml overage. Cover with cling film and leave to one side.
Step 2
Place the broccoli into a pan of boiling water on medium heat and dash in a pinch of salt. Whilst it's cooking place the remaining ingredients into a large mixing bowl and add the maggi seasoning.
Step 3
Once the cous cous is ready, fluff it with a fork and mix into the chopped vegetables. Drain the broccoli, mix into the cous cous salad and drizzle over the vinaigrette.
Step 4
Serve either hot or cold and enjoy with a cooling glass of iced tea. Bonn appetite!
