Brandy and Cream Sauce for steak

Ingredients
- 3 chestnut mushrooms finely chopped
- 1 small onion finely chopped
- 1/4 cup Brandy
- 1/4 cup Beef Stock
- 1 tblspn Dijon mustard
- 1 tspn fresh thyme
- 1/4 cup double cream
- Salt and freshly ground black pepper
- 1/2 tblspn oil
- Fresh chives to finish

Preparation
Step 1
Heat oil over a medium heat and fry onions and mushrooms until tender (4 to 5 mins)
Step 2
Remove from heat and add brandy
Step 3
Return to the heat and add stock, mustard and thyme and mix well
Step 4
Add cream and simmer gently until slightly thickened
Step 5
Add salt and pepper to taste
Step 6
Pour sauce over steak, sprinkly with chopped chives and serve
