Steak with a Fresh Herb and Chilli Sauce

Ingredients

  • 2 x 8oz Sirloin steaks
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon flat leaf parsley, chopped
  • 3 tablespoons olive oil
  • 2 red chillies, finely chopped
  • 1 garlic clove, crushed with a little sea salt
  • 1 teaspoon red wine vinegar
  • Salt and pepper

Preparation

Step 1

Heat a griddle pan until very hot.

Step 2

Season steaks with salt, pepper and the rosemary. Brush with 2 tablespoons of olive oil.

Step 3

Fry for 2-3 minutes on each side (for medium).

Step 4

Remove pan from heat and let the steaks rest for 10 minutes.

Step 5

Mix the chillies, parsley, garlic, vinegar and remaining olive oil in a bowl.

Step 6

Slice the steaks and pour the sauce over to serve.
