Ingredients
- 1 1/4 lb plain flour
- 1 lb sultanas
- 1 lb currants
- 1 lb soft brown sugar
- 3/4 lb butter
- 1/2 pint stout
- 1/2 lb mixed peel
- 4 eggs
- rind of 1 lemon
- 1 tsp spice
- 1 tsp bi-carbonate of soda
- 1/2 lb chopped or ground almonds (optional)

Preparation
Step 1
Cream butter through flour.
Step 2
Mix in all fruit, sugar, spice and lemon rind, then the eggs.
Step 3
Heat the stout and put soda into it just before adding it to the other ingredients.
Step 4
Beat together for 20 minutes.
Step 5
Bake for two hours.
