Ingredients

  • dough
  • - 1 glass of wheatmeal
  • - 1 glass of cake flour
  • - 125 g butter
  • - 2 egg yolks
  • - 1 tbsp sugar
  • - 1 tsp vodka
  • - baking soda (~2 pinches)
  • - ~2-3 tbsp water
  • - ~ 1/4 tsp salt
  • apples
  • - 1 kg pearmains
  • - 1/2 glass of sugar
  • - 1/2 ground cinnamon

Preparation

Step 1

knead the dough using all ingredients. divide it into 2 pieces and leave them in the fridge.

Step 2

in the meantime peel the apples and cut into quarters.

Step 3

put them into the pan and stew them. add some water in case of parching. add the sugar and the cinnamon when the fruit start to soften. turn off the gas instantly when they start to fragment. let them cool down.

Step 4

lay down the pie pan by bakery paper. roll the first piece of the dough out thinly and put into the form.

Step 5

bake it for 10 min. in 190*C.

Step 6

after that put the pearmains on the cooled pie crust.

Step 7

dilacerate the second piece of the dough on the fruit to cover them.

Step 8

bake the charlotte for 40-45 min. in 190*C.
serve warm.

the form should be round with diameter of 26 cm.
