Spaghetti carbonara goes green!

  • 200g spaghetti
  • 1 packet of lardons
  • 200 ml double cream/creme fraiche
  • 150g green beans

Preparation

Step 1

Boil some water. Wash the green beans, remove the stems and slice diagonally (they will look nicer in the dish).

Step 2

In a saucepan of boiling salted water, blanch the beans. Remove them with a perforated spoon and plunge them into a bowl of cold water to keep their bright green colour.

Step 3

In the same boiling water, cook the spaghetti for 8 and 10 mins. Cook the lardons in a frying pan (with no extra fat) and then add the green beans halfway through cooking.

Step 4

Once the lardons are cooked, add the cream. Bring to a boil to thicken the sauce, add pepper and turn off the heat.

Step 5

Drain the spaghetti. Serve on plates and then cover with the carbonara sauce with the green beans on top.
