Omelette flambé with Caribbean rum

In a large bowl prepare the omelette. Preheat a large round dish (like a flan dish).
In a large frying pan, melt the butter and cook the omelette on both sides. Place the omelette onto the dish and sprinkle with sugar.
Roll like a pancake.
In a small saucepan heat the rum, pour over the omelette and flambé.
