-Preheat the oven to gas mark 6 (200 ° C).
-Peel and cut the potatoes into quarters and then slice 2-3 mm thick. Cook for 10 minutes in salted water.
-Meanwhile, cut the roquefort into small cubes and mix with 10 cl of creme fraiche. Refrigerate.
-Cut the ham into strips (3 cm x 1 cm). Spread the pastry in the tin. Refrigerate.
-In a bowl, beat 2 eggs, 2 yolks and the remaining cream until you get a smooth mixture. Add cream and blue cheese mix.
-Salt lightly and pepper.
-On the pastry, place the potatoes and the strips of ham. Pour over the blue cheese cream.
-Place in a hot oven and bake for 25 minutes.
