Greek-American Spinach Pie

Ingredients
- 1 onion
- 2 cloves garlic
- 16 oz. frozen spinach
- or 2kgs fresh spinach
- 2 tablespoons dried dill
- 1 package cream cheese
- 1 block feta (crumbled)
- 1/2 cup parmesan cheese
- ½ tsp salt
- 15 cranks black pepper
- 2 eggs
- 1 (8 oz.) filo dough package

Preparation
Step 1

Preheat the oven to 375 degrees. Dice the onion into small pieces and mince the garlic. Cook both in a small skillet with olive oil over medium heat until soft and transparent (about five minutes). If you're using frozen spinach, before adding it, strain it in a colander and press out as much moisture as possible (squeezing handfuls in a fist works well too). For fresh spinach just add it to the pan and cook until soft.
Step 2

While the onions and garlic are cooking, prepare the rest of the filling. In a bowl combine the cream cheese, crumbled feta, parmesan cheese, eggs, salt, pepper, and dill. Mix well.
Step 3

Once the onions and spinach have softened, add them to the cheese/egg mixture. Stir until well combined.
Step 4

Open the filo dough pack and carefully layer 5-10 sheets of dough on the base of a baking dish. In between each layer, sprinkle a bit of olive oil.
Step 5

Add the spinach mixture to the centre of the pie, then top with another 5-10 sheets of filo dough (also drizzling oil between layers). Carefully press in the corners of the dough and Larz, don't forget to drizzle olive oil on the top layer before baking.
Step 6

Bake for 45 minutes until golden. You may need to cover with foil if the top layers start to burn before the pie is fully baked. slice and SERVE!
