Dandelion cordial

Ingredients
- 450g dandelion flowers
- leaves
- 350g caster sugar
- 1tsp citric acid
- water enough to cover the dandelions

Step 1

Put the dandelions in a pan and cover in water. Simmer in water until flavour has been infused in the water. Press down on the dandelion to squeeze the flavour out.
Step 2
Remove the pan from the heat and let cool. Once cooled strain through a muslin or fine sieve, into a jug, squashing the dandelion to get all the flavouring.
Step 3
Add 350g of sugar to every 500ml of 500ml of liquid, then add citric acid, keep stirring until sugar is dissolved. spoon of any floating debris.
Step 4
Pour into sterilized jars and store. When you drink it dilute with water.
