  • 3 cups chapatti brown flour
  • 1 1/4 cups lukewarm water
  • 1 packet instand dried yeast
  • 1 tsp salt
  • 2 tsp brown sugar
  • 1 tbsp extra virgin olive oil

Step 1

In a big bowl, pour in the flour and salt and mix well.

Step 2

Sprinkle the yeast and sugar on top of the flour mix and add the lukewarm water (around body temperature) and oil, then mix well until a dough is formed. The dough will be quite wet so no kneading is necessary at this stage. Cover the bowl with plastic wrap and let rise for at least 3 hours in a warm place (the microwave if not being used).

When it doubles in size, sprinkle flour on top of the dough and divide it in two. Make a round ball and flatten it, stretching it as much as possible to get a thin crust.

Step 4

As a condiment, use a mix of tomato sauce, oregano and olive oil. Then add sliced onions, capers, mushrooms and fresh tomatoes.

Step 5

Cook in the oven with a pot of water on the bottom at 200C for around 10-15 minutes.
