Ingredients

  • 250ml vegetable oil
  • 175g caster sugar
  • 50g light brown sugar
  • 4 eggs
  • 140g carrots (2)
  • 1 teaspoon vanilla extract
  • 225g self-raising flour
  • 1 teaspoon baking powder
  • 1½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • A pinch of salt

Preparation

Step 1

Heat the oven to 180°C.
Place the sugars, eggs, oil and vanilla into a bowl and combine well.

Sieve the flour, salt, baking powder and spices into another bowl and mix well.


Wash and grate the carrots.

Mix the wet and dry mixtures. Combine well.

Gradually stir in the carrot.

Pour the cake batter into two greased, rectangular pan, lined with baking paper.

Bake for 30 mins.

Remove from oven and cool.

Dust with icing sugar.
