Ingredients

  • For the dough:
  • Strong white flour (Bread flour) - 400 g and extra to sprinkle when rolling out
  • Dried yeast - 7 g
  • Sugar - 50 g
  • Salt - 1/4 teaspoon
  • Milk - 250 ml
  • Butter - 75 g
  • For the filling:
  • Butter - 40 g
  • Ground cinnamon - 1 tablespoon
  • Sugar - 40 g
  • Grated apple without skin - 100 g
  • For glaze and decoration:
  • Egg - 1
  • Icing sugar - 75 g
  • Water - 1 teaspoon

Step 1

Apple and Cinnamon Swirls - Step 1

1. In a mixing bowl, mix strong white flour, dried yeast, salt and sugar. In a saucepan or the microwave, heat the milk and butter. Mix well till a soft but slightly sticky dough is formed. Knead well till a stretchy dough is formed. This process takes about 8 to 10 minutes. Place in a greased bowl and cover with cling film to create a warm atmosphere in the bowl which will help the yeast grow. Keep in a warm place for 2 hours or until it doubles in size.

2. Roll the dough out into a rectangle about 30 cm X 25 cm on a lightly floured surface.

3. Make the filling by melting the butter in the microwave. Mix the sugar and ground cinnamon making a paste. Spread the paste over the dough evenly. Spread the grated apple.

4. Fold the dough from one end to the other forming a Swiss roll shape. Seal the edges by pinching them together. Divide into 12 slices.

5. Place in a greased muffin tin or a baking tray. I prefer to use a muffin tin so that the buns don't stick to each other. Cover and leave in a warm place for 20 minutes to prove again. Glaze with the beaten egg to given a golden brown color.

Step 6

6. Preheat oven to 200 degrees. Bake for 25 minutes till they are well risen and golden brown.

7. Remove from the tin and leave to cool on a cooling rack.

8. Mix the icing sugar with water to make a thick glace icing. Once the swirls have cooled down, use a piping bag with a writing nozzle and draw a zig zag pattern over each bun. Let it set.

You can freeze the swirls once they have been baked and ice them once they have been defrosted for 4 to 6 hours.
Try other flavor combinations for the fillings.
Drizzle with melted chocolate.
