  • 4 1/2oz Self Raising Flour
  • 3 eggs
  • 250ml Skimmed Milk
  • 2oz Desiccated Coconut
  • 1tsp Bicarbonate of Soda
  • 1 Small Lemon

Preparation

Step 1

Measure Vi Shake, flour, and bicarbonate of soda and sieve.

Add the coconut in the mixing bowl with the dry ingredients.

Grate the lemon and add the zest to the mixing bowl.

Crack the eggs and separate the whites from the yolk.

Measure the milk and using the lemon from earlier and add 1tsp of lemon juice add to the milk.

Add the egg whites, milk and lemon juice to the mixing bowl and fold the mixture until ready.

Put mixture into muffin cases quickly but carefully.

Put the muffins into the oven for 20 minutes on 180 degrees.
