Red Velvet Cupcakes
Some the easiest, best tasting cupcakes you'll ever have the pleasure to bake (and eat!)

Ingredients
- 250g plain flour
- 2 tablespoons cocoa powder
- 2 teaspoons baking powder
- ½ teaspoon bicarb
- 100g soft unsalted butter
- 200g caster sugar
- 1 big tablespoon red food colouring
- 2 teaspoons vanilla extract
- 2 eggs
- 175 ml buttermilk
- 1 teaspoon cider vinegar
- Buttermilk:
- 1 cup milk
- 1 tablespoon lemon juice

Preparation
Step 1
Preheat the oven to 170°C and grease 2 muffin tins, with paper cupcake holders, if desired.
Step 2
Combine together cocoa, flour, cocoa, baking powder and bicarb.
Step 3
In another bowl, mix the butter and sugar, food colouring and vanilla.
Step 4
Add 1 spoonful of the dried ingredients, then 1 egg, then repeat this process until all the ingredients are added.
Step 5
Add the buttermilk and the lemon juice and pour into cupcake cupcakes and pop into the oven for 20 mins.
Step 6
Leave them to cool on a wire rack and prepare the icing.
Step 7
Buttermilk: Combine the milk and lemon juice.
Let it stand for no longer than 10 minutes.
Now it's ready to dollop onto the cooled cupcakes.
