Ingredients
- 250g soft butter
- 600g white sugar
- 6 eggs
- 2 tablespoons red food colouring
- 3 tablespoonscocoa powder
- 375g plain flour
- 250ml buttermilk
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon bicarbonate powder
- 1 tablespoon vinegar
- Icing
- 200g cream cheese
- 350g white chocolate
- 250g soft butter

Preparation
Step 1
Preheat oven to 170C. Grease and flour three 20cm tins.
Step 2
In a large bowl, mix 250g butter and the sugar then add the eggs, one at a time.
Mix in the red food colouring with cocoa.
Add flour alternately with buttermilk. Add vanilla and salt.
Mix bicarbonate of soda with vinegar, and gently stir into mixture. Be careful not to over mix.
Step 3
Pour cake mixture into three greased tins. Bake in the preheated oven for 25 minutes. Cool.
Step 4
White Chocolate Cream Cheese Icing:
Melt white chocolate in a heatproof bowl over a steaming pan of water.
In a bowl, mix the cream cheese until fluffy and then gradually add in melted lukewarm white chocolate and soft butter.
Mix it until it is like whipped cream.
Use this mix to spread between the cakes and to decorate the top and sides.
