Preheat oven to 180 ° C, gas mark 6. Cut 16 strips of puff pastry to 5 mm wide and 12 cm long. Place them on a baking sheet covered with parchment paper.
Put them to cook for 12-15 minutes in the oven. In the oven, place another baking tray on laminated to flatten them slightly. Cut the salmon into cubes 1.5 cm x1, 5 cm.
Mix the olive oil in a container with yuzu juice, salt and pepper. Put the cubes of salmon marinated in 30 min cool. Chop the chervil.
Remove the salmon cubes from the marinade, toss in the chopped chervil. Incise slightly each piece of salmon, plant a stick in each puff. Serve immediately.
