Step 1
The night before, peel the carrots and cut them into slices. Cut the onion into 4 and prick it with cloves. Peel the garlic and crush it.
Put all the ingredients in a large bowl with the meat, red wine, bouquet garni, and bacon lardons. Salt and pepper. Marinate for 24h.
Step 2
Separate the meat from the marinade. In a large saucepan, sweat the chopped shallots in butter. Add the meat and 3 tablespoons of flour. Stir with a wooden spoon.
Step 3
When the meat is coloured, pour in all the marinade with the vegetables and the lardons. Cover and leave to simmer on low heat for 1 1/2 hours.
Step 4

Leave the stew to cool completely. Boil a large volume of salted water. Peel the potatoes, cut them into very large cubes and hollow out the flat side. Cook for 15 minutes.
Step 5
Cook the stew again, covered, for 1 1/2 hours. Remove from the heat, add the dark chocolate and stir.
Step 6
On each plate, place two potatoes, and pour the sauce into each hollow potato and place a potion of stew beside them.
