Cherry ice cream

Preparation

Step 1

Boil the milk with the vanilla bean, split in two.

Step 2

Whisk the egg yolks with the sugar until frothy, pour over the milk and leave to thicken over low heat without boiling.

Step 3

Leave to cool and then stir in the cream.

Step 4

Pour into an ice cream maker to set.

Step 5

Meanwhile wash, hull and stone the cherries.

Step 6

Boil water and the sugar, add the kirsch once you have obtained a syrup and then poach the cherries for 15 mins.

Step 7

Drain them, keeping the syrup.

Step 8

When the ice cream has set but is still soft, add three quarters of the cherries.

Step 9

Grind the ice cream.

Step 10

Serve the ice cream, decorated with the rest of the cherries and topped with the syrup.
