Ingredients

  • 3/4 cup almonds
  • 1/8 cup sesame seeds
  • 1/8 cup sunflower seeds
  • 3/4 cup rolled oats
  • 3/4 cup mixed dried fruits (cranberries & blueberries)
  • 1/3 cup maple syrup
  • 1 tsp ground cinnamon
  • coconut oil for greasing

Preparation

Step 1

Pre heat oven to 135*c
Place the almonds, sesame seeds, sunflower seeds and oats into a blender and pulse until almost powdered.
Tip into a bowl and add dried fruits, maple syrup and cinnamon.
Mix until it starts to clump together.
Grease a 6" latex cake mold and tip in the mixture.
Press it down with the back of a spoon to compress it.
Bake for 1 hour.
Remove from the oven, turn out from mold and slice whilst still warm.
