Ingredients
- 2 sliced red onions
- Calorie controlled cooking spray
- 280g halved reduced fat sausages
- 3 crushed garlic cloves
- 110g sliced cooking chorizo
- 1 teaspoon smoked paprika
- 400g chopped tomatoes
- 6 ripe tomatoes, chopped
- 400g drained pinto beans

Preparation
Step 1
Soften the onions
Step 2
Add tbe sausages to the onions and brown
Step 3
Add the garlic and chorizo, cook until the chorizo has released its oil
Step 4
Reduce the heat, add the paprika
Step 5
Add all the tomatoes and 400ml water, simmer, covered for 30 minutes
Step 6
Add the beans, increase the heat and remove the lid, boil until the sauce reduces.
Serve with rice or couscous. This freezes well.
