Harira Soup

Ingredients
- 1 lb of boneless lamb cubes
- 2 level tsp of salt
- 2 finely chopped onions
- ¼ tsp nigella seeds
- 4 tbsp cooking oil
- 1 tbsp freshly ground black pepper
- ½ tbsp cinnamon powder
- 1tsp turmeric powder
- 7 oz brown lentils
- 1 can of chick peas/ broad beans
- 5 tbsp tomato paste
- 5 stalks of celery finely sliced
- 4 oz chopped coriander
- 4 oz chopped flat leaf parsley
- 3 tbsp vermicelli
- 2 tbsp corn flour dissolved in a cup of water
- 1 tbsp butter

Preparation
Step 1
1. Heat oil in a large pan. Add nigella seeds to the pan and lightly fry the onions in it.
Step 2
2. Add the turmeric, black pepper and cinnamon and mix in the lamb at a high heat.
Step 3
3. After 3 minutes, stir in the lentils, beans and salt.
Step 4
4. Blend the tomato paste in 1 cup of water and add it to the pan.
Step 5
5. Add a further 3 cups of water and simmer until the meat is almost tender.
Step 6
6. Add the coriander and parsley and cook for a further 10 minutes.
Step 7
7. Finally add the vermicelli, corn flour paste and a tablespoon of butter.
Step 8
8. Continue to stir until the soup has thickened and now the Harira soup is ready to serve!
