Family Favourite Lancashire Hotpot

This hotpot recipe is very easy and tasty. cooked it in a slow cooker and the family can have a hot and healthy meal in the evening after work.

Ingredients

  • 750g/1½lb lean beef cubes
  • 2 tablespoon cooking oil
  • 50g/2oz plain flour (with salt and pepper)
  • 2 onions (sliced)
  • 500g/1lb potatoes (peeled and sliced)
  • 2 celery stalk (sliced)
  • 1 carrot (cubed)
  • 100g/4oz swede (cubed)
  • 30ml dry sherry
  • ½ teaspoon mustard
  • 1pich of ground nutmeg
  • 3 bay leaves
  • ½ teaspoon rosemary (chopped)
  • 1 teaspoon thyme (chopped)
  • 350mls beef stock
  • 15g/½oz butter + 1 clove chopped garlic

Preparation

Step 1

Coat the beef with flour. Fry beef in cooking oil in a frying pan till lightly brown. Layer the beef and the vegetables (except the potato slices) in slow cooker Season with salt and pepper.

Step 2

Add in the bay leaves, thyme, rosemary, mustard and nutmeg.Cover with potato slices then pour in the stock and sherry. Spread with garlic butter and sprinkle with ground pepper.

Step 3

Cover the slow cooker and set on No.1 setting and cook for 2 hours.
