Vegetable soup with veal

Preparation
Step 1
Melt the butter or margarine and fry lightly the onion and garlic 3 to 4 minutes. Add the veal and cook 3-4 minutes, stirring occasionally.
Step 2
Add the water, herbs, split peas and barley, bring to a boil, cover and simmer for 1 hour 30.
Step 3
Add the potatoes, kohlrabi, leeks, carrots and parsnips and cook 20 minutes more. Remove the knuckle of veal.
Step 4
Add the celery, beans and mushrooms and simmer another 10 minutes.
Step 5
While the vegetables cook, remove the veal. Cut into pieces and put back into the soup.
Step 6
Garnish with chopped parsley in each bowl and serve.
