Discover Live Local Greens's favourite recipe: Moroccan roasted squash with spiced chickpeas

"... if you have any ideas or suggestions for how to cook with seasonal veg, I would love to hear them!"

Hello Live Local Greens, so tell us...

When did you begin your blog and what inspired you to start it?

I have only recently started the blog, as I had just signed up to the Local Greens veg bag scheme and I wanted to share how I cooked the various vegetables they provide. I really enjoy cooking and experimenting in the kitchen, and lots of my friends told me I should start a blog, so I finally did it!

In your wildest dreams, where is your blog going to take you as it develops?

I have always loved cooking and food, so it would be amazing if I could publish my own recipe book and maybe one day run a little cafe or restaurant - one can dream!

Do you have a secret weapon in the kitchen?

I really love my hand-held blender! It's great for making soups, smoothies and dips (like my Beetroot Hummus) and has an extra attachment for making things like pestos and curry pastes. My darling Dad got me it for Christmas a couple of years ago and I've sworn by it ever since!

How long have you been a vegetarian?

I've been a vegetarian this time round for about three years. I tried to go veggie quite a few years ago and only lasted a couple of months, but now I believe more in why I'm doing it - environmental and health reasons- so I am fully committed to it. Plus my boyfriend has been a vegetarian for most of his life so he keeps me on track!

What is your earliest memory involving food?

I remember doing a lot of baking with my Grandmother when I was growing up- she was an excellent cook. Me and my brother used to make these little bread rolls that looked like hedgehogs and I have memories of us wearing mini aprons and covering her kitchen in flour! Maybe that should be a future blog post...

Tell us a bit more about Local Greens

Local Greens is a volunteer led, not for profit organisation that provides a weekly veg bag scheme in various areas of South East London. All of their veg comes from organic or spray free farms that are as close to SE London as possible.

I am very eco conscious and had thought about joining a veg box scheme for quite a while, and the fact that I would be supporting a local organisation and local farmers made Local Greens the obvious choice.

I have really noticed a difference in the taste of the veg that you get- and the sizes and shape! It makes you realise that what you can buy in the supermarkets really isn't 'proper' veg.

It sounds like I work for them or get paid commission, but I don't I promise; I'm just a big fan!

If you could be a contestant or guest on any cooking show what show would you choose?

I do love the Great British Bake Off, but I tend to bake as a way of relaxing so I don't think I could cope with the pressure!

Which Gourmandize recipe would you recommend? (if none take your fancy add your own and share it with us!)

I've just added my latest recipe from the blog- Moroccan roast squash with spiced chickpeas, which can be found here (and of course, on my blog!)

Any last words or message for our readers?
